Brown Rice Pulao

 



Brown Rice is considered good for health but most people don't like it due to its taste and texture. Give this aromatic pulao recipe a try for lunch or dinner and I am sure you will start liking it. 


RECIPE
Serves 4-5
Prep time 1 hour
Cook time 10 minutes 
Tools: Pressure cooker, strainer, chopping board.


INGREDIENTS 

Brown Rice 1 cup
Peanut oil 3 tbsp
Cumin 1 tsp
Salt 1 tsp
Turmeric powder 1/4 tsp
Biryani masala 1 tbsp
Carrots,  chopped 0.5
Onion, chopped 0.5
Peas 1/4 cup
Water

METHOD 






Soak rice in water for an hour.




Wash, peel and chop veggies. Thaw green peas by keeping in warm water.




Heat pressure pan. Add oil and cumin seed. Saute by adding onion, carrot and peas for 4 to 5 minutes.




To this add seasonings and cook for a minute or two. Biryani masala, Salt and turmeric.




Drain rice and add to the masala. Fry in masala well for 2 minutes.




Add water and boil for few seconds. Seal with lid and take 2 whistles.




Serve hot with kadhi, chutney or raitha.

Ragi Banana Cobbler



I am a big fan of the idea of making cobblers with fresh fruits.

Every fortnight I simply make a scrumptious batch of cobbler for myself.

It's mostly seasonal fruits that I choose, but bananas are my all time favorite.

I try to make it refined flour and sugar free so then I  can enjoy this dessert without feeling guilty later.

This my tested and tried easy peasy recipe that I have tweaked several times.


1/2 cup Walnuts chopped
Bananas 3-4 ripened ones
1/2 cup Wheat flour
1/2 cup Ragi flour (finger Millett)
1 cup Powdered Jaggery
1/2 cup Melted butter
1 cup Milk
1 tablespoons Baking powder
Few drops of Vanilla extract

In a bowl mix wheat flour, ragi flour and baking powder.

In a jug or mug mix milk, melted butter, vanilla extract and jaggery.

Let jaggery dissolve well in the liquid.

Before mixing wet and dry stuff, preheat your oven @180°C.

Mix the liquid mix with the dry ingredients in 3 parts.Take an oven safe 7 inch pot with 4-5 inch depth. Lightly grease the pan with some butter.

Slice bananas and spread evenly on the bottom of the pot/pan.

Sprinkle some chopped nuts over the banana pieces. Pour the thick cake batter prepared.

Spread the remaining chopped walnuts on top.

Put the pan inside preheating oven and bake until the top surface looks firm.

Serve warm with a dollop of whipped cream or ice cream or just as is.

Wheat flour one bowl pizz

If you can make a healthy pizza in just 5 minutes..... Will you wait for your pizza order to arrive for 20 minutes...

And believe me this is yummier than the store bought one....

Will update recipe...  as I am busy enjoying it now😊😊


In an MW safe bowl whisk together 1/2 cup whole wheat flour with 1/4 cup milk, a tablespoon or two of garlic n herbed butter (I am a big fan of amul flavoured butter😋) u can use olive oil instead. Add 1/4 tsp of baking powder, pinch of salt and pepper and whisk (Add less salt as butter and cheese are also salty)...now u may add your favourite grated cheese, around 2 tbspns of it. Mix everything well and smooth the surface. This should be a thick batter... spread some pizza sauce on top. Spread veggies of your choice. I added peas, sweet corn and sliced cherry tomatoes. Sprinkle some grated cheese on top and also sprinkle some pizza seasoning...

Bake in MW till the surface looks firm and the cheese has melted. It may get cooked in 3 minutes (depending on your MW)so keep checking after every minute. 


Notes; take a large bowl keep 3/4 room for the mixture to rise so that it doesn't spill.

Beetroot Halwa / One-pot Halwa recipe



Beetroot Halwa is similar to the very popular carrot halwa. Beetroot Halwa is an Indian dessert which is prepared in same way as we do in carrot halwa, in which grated roots is slowly cooked in milk, dry fruits, sugar and some ghee. To speed up the process, I have cooked shredded beet in pressure cooker and added mawa. Beetroot Halwa may sound a little strange to some, and some may love its richer and sharp taste. My family likes to have this unique dessert during occasions and festivals once in a while. This halwa is a very interesting way to include such a nutritious root in our meals, if your family doesn't like to eat beet in salad form.
