OnePot Peas and Kaju Pulao Recipe



We all love to enjoy Pulaos and biryanis, but many of us avoid making them at home as it takes lot of time. I like to make my Pulaos and Biryanis as simple as possible, I  also like to make in traditional manner, if I have planned ahead and assembled all dry ingredients, so I can put it together the next day in lesser amount of time. 

I am Sure you all will agree with me when I say that, we all need a short cut method for all our traditional recipes. And this one is that short cut method for a rich pulao recipe.

Cashews are incredibly versatile dry fruit that can be made savory or sweet. Add a few Cashews to any of you recipes and the dish becomes richer and Classier.

I add them to almost all Pulao recipes, be it Bisibelabhat or lemon rice. This is a very easy onepot recipe that can be had as full meal or serve it with side dishes like; Raithas, pickles and papdams.

Serves 4-5 people
Prep times: 15 minutes
cooking time : 15 minutes

Tools Needed: Pressure cooker.

INGREDIENTS

1 1/2 cups Rice

3/4 cup frozen/fresh

1/2 cup whole Cashews

2 tablespoons oil/ghee

1 teaspoon cumin seeds

1 onion finely chopped 

1 small carrot cubed

2 medium size potatoes cubed

Salt to taste

1 teaspoon Red chilli powder

1 teaspoon Indian Garam/Goda/Kala masala

1/4 teaspoon turmeric powder 

2 tablespoons chopped coriander leaves for garnish.

METHOD

Clean and wash the rice in a bowl and set aside. Chop,  peel and cube the vegetables vegetables. If using frozen peas, keep them aside in a bowl for thawing for just few minutes.

In a pressure pan, heat oil and add cumin seeds and saute for 2 minutes, add onions and cook till golden in color. Add all the vegetables and let them roast for 2-3 minutes.

Add the above mentioned spices and salt and mix well. Let all the vegetables coat with the spices for few minutes.

Add rice and mix well

Once the rice is well coated and mixed with all the masalas add 3 cups water.

Let the water boil, cover the lid of the pressure pan and wait until 2 whistles. Let the pan cool naturally and then open the lid. 

Tasty Pulao is ready, garnish with chopped coriander leaves before serving. This easy onepot pulao can be paired with Raitha, papads or pickles.
