Every fortnight I simply make a scrumptious batch of cobbler for myself.
It's mostly seasonal fruits that I choose, but bananas are my all time favorite.
I try to make it refined flour and sugar free so then I can enjoy this dessert without feeling guilty later.
This my tested and tried easy peasy recipe that I have tweaked several times.
1/2 cup Walnuts chopped
Bananas 3-4 ripened ones
1/2 cup Wheat flour
1/2 cup Ragi flour (finger Millett)
1 cup Powdered Jaggery
1/2 cup Melted butter
1 cup Milk
1 tablespoons Baking powder
Few drops of Vanilla extract
In a bowl mix wheat flour, ragi flour and baking powder.
In a jug or mug mix milk, melted butter, vanilla extract and jaggery.
Let jaggery dissolve well in the liquid.
Before mixing wet and dry stuff, preheat your oven @180°C.
Mix the liquid mix with the dry ingredients in 3 parts.Take an oven safe 7 inch pot with 4-5 inch depth. Lightly grease the pan with some butter.
Slice bananas and spread evenly on the bottom of the pot/pan.
Sprinkle some chopped nuts over the banana pieces. Pour the thick cake batter prepared.
Spread the remaining chopped walnuts on top.
Put the pan inside preheating oven and bake until the top surface looks firm.
Serve warm with a dollop of whipped cream or ice cream or just as is.
