Ragi Dark Chocolate Cake | Eggless Recipe


Ragi/ Finger Millet is known as a wonder grain with many health benefits. It is a cereal widely consumed by the people of south India and many African countries. It is rich in protein, calcium and has a high fiber content. It is considered to be the best aid for people suffering from diabetes. It is also a common baby food in south India. 

Ragi is believed to be good for your body, mind and your skin. It keeps your mind calm and relaxed, it gives a cooling effect when consumed during summers, it is also a main agent in weight loss, including various other advantages.

Presenting to you a Ragi cake with no refined sugar and no plain flour. An appetizing and wholesome eggless chocolate cake frosted with dark chocolate ganache, topped with roasted walnut pieces. Healthy Cake which will not make you feel guilty after you've enjoyed it, rather it may make you sense satisfaction and happiness from the inside.

Decadent and Wholesome Chocolate Ragi Cake

 RECIPE

Serves 4-5 Peoples Party

Prep time: 10 minutes

        Baking Time: 40 minutes

        INGREDIENTS 

3/4 cup Ragi flour

3/4 cup Whole wheat flour

1/4 cup Cocoa powder

Pinch salt

1 cup Brown sugar

1 teaspoon Baking powder

1 teaspoon Baking soda

1/3 cup Oil

1 tablespoon Vinegar

1 cup Warm water

1 teaspoon Vanilla essence

Dark Chocolate ganache

200 grams Dark Chocolate chopped

150 ml Fresh cream

1/2 cup Rosted walnuts chopped

3-4 halves Roasted walnuts

METHOD

1. In a large bowl take a sieve, add flours, cocoa powder, baking powder, baking soda and a pinch of salt. Sift everything together. Mix well and set aside.

Step 1

2. In another bowl add brown sugar, warm water, vinegar. Mix until sugar dissolves. Also add in oil, vanilla essence and mix well.

Step 2

3. Prepare a 6.5 or 7 inch pan by lining. Mix wet and dry ingredients together. Do not beat vigorously. Just mix roughly. Pour in prepared pan. Tap the pan on counter.

Step 3

4. Bake for 50-60 minutes or until toothpick inserted in the center comes out clean.

 5. Cool over a wire rack for 10 min. Invert the cake and let it cool completely.

Torting cake

          6. Make ganache over stove top by Bain Marie technique.  

7. Take 1 cup water in a 1 letre capacity pan and put on heat.

 8. Once water start to boil, place a larger bowl that fits on top of the pan.

 9. Add cream in the bowl. After the cream starts to get warm add chopped chocolates. Dip the chocolates in the warm cream with a spoon and let it sit.

10. After few minutes mix it. Check if there are no chunks of chocolates and that it has melted completely. Cool the mixture 

 11. Let's decorate the cake. Juts slice the top uneven part carefully. Tort the cake in 2 horizontal halves.

Step 6,7,8,9,10

12. In a disposable piping bag, take ganache. Chop off the end and keep ready. Place bottom layer of cake on a cake board. Pipe the ganache. Add chopped walnuts and press into the ganache.

13. Now place the top cake layer, upside down and slightly press and check if it's placed properly in the middle. Now pipe some more ganache on it. Spread evenly using a spatula.

Piping & Decorating 

14. You may decorate with any design you like. I spread some more walnuts on top. Wipe out the crumbs using a paper napkin.

15.  Refrigerate for some time, slice and enjoy the decadent, guilt free cake
