Sugarfree Dates Wheat Cake





RECIPE 

Serves 8
Prep time 1 hour
Bake time 20 minutes
Tools: Oven, Baking pan, mixing bowl, mixer grinder.

INGREDIENTS 

3/4 cup chopped dates

1 cup hot milk

1/2 cup oil

1 cup whole wheat flour

1 teaspoon baking soda

1/4 cup Chopped cashew nuts

1 teaspoon wheat flour for coating cashews

8-10 slit cashews extra for top


METHOD


Soak chopped dates in 3/4 cup milk for 2 hours.

Puree dates and milk mixture.






Mix oil into the dates puree.


Whish together flour with soda.

Coat chopped cashews with a teaspoon of flour.


Mix dry and wet mixture, by adding flour in 2-3 portions. Add remaining milk only if batter is too thick.

Also add cashews and fold the batter just until everything is combined. The batter will be thick.



Butter and dust a 6 or 7 inch cake tin.
Pour the btter and even out the surface.

Bake in preheated oven for 30 minutes or until toothpick inserted in the center comes out clean. Cool over wire rack for 7 minutes, remove the cake over wire rack and cool completely.


Serve with favourite beverage.

Sugarfree Oats Cake


Oats Cake using only dates, banana and raisins as sweeteners. Got up at 5:30 today morning to bake these (I had purposely left 2 large bananas to ripen and didn't let anyone eat it)

As I am keeping very busy these days, I bake something so I can store for 4-5 days and enjoy small portions, to satisfy my sweet cravings  🤨🤨🤨 but my daughter loved it so much that she carried the loaf shaped one with her to college,,,, for her friends...😂😂 so now I have to bake again and buy more bananas and wait for them to ripen😋😊

Here's how I made this one Sugarfree Oats Cake

Take 2-1/2 cups of quick cooking oats and coarsely powder it.
Take another 1/2 cup of oats as is
1.5 teaspoon baking soda
1 teaspoon Cinnamon powder
1/2 teaspoon Cardamom powder

2-3 tablespoons room temperature coconut oil(which was in a semi liquid form)
2 large ripe bananas
10-12 deseeded dates
1 cup lukewarm milk(I used regular lowfat milk, any dairy free milk can be used as well)

1/2 cup chopped walnuts and raisins
Few sprinkles of pumpkin and sunflower seeds to decorate the top.

Preheat oven @180°C




Grind dates, bananas and milk in a mixer pot. Need not grind very smooth, some tiny bits and pieces of dates and bananas tastes awesome in the cake.




Mix all dry ingredients together in a bowl, cardamom, cinnamon powders, floured oats, flaky oats and baking soda.




Bring together the pureed mixture with dry ingredients, please remember to just mix to combine, beating or whisking is not required, also add raisins and walnuts.




Decorate with pumpkin and sunflower seeds or any seeds and nuts of your choice.

Grease an 8 inch round tin or bake in 2, 6 inch tins.




It may take 30-35 minutes to bake completely

Flourless zucchini Muffins





Flourless rich double chocolate muffins made from Peanut butter carrot zucchini banana flaxgel and loads of choco chips.

These carrot zucchini muffins are gluten-free, oil-free, sugar-free, grain-free and flourless, they are so soft and chocolatey that no one will believe that these are healtht

Mixed in just 5 minutes, baked in just 15-20 minutes these muffins make a delicious healthy dessert or snack and the best part is that they’re loaded with chocolate flavour without even a hint of carrot or zucchini. U cannot even see the veggies inside the muffins. That means that you can easily sneak some extra veggies into your kids or anyone's diet by feeding these delicious muffins.

So if you’re looking to get some more veggies into your families diet, or you’re just craving to have soft and chocolatey muffin, then you should definitely give it a 7go.

For vegan option, you can replace chocochips with same amount of dry fruits n nuts or if can get your hands on dairy free choco chips, go with it.

Ingredients (makes 10-12)
½ cup zucchini grated
½ cup carrot grated
2 bananas mashed
¼ cup unsweetened cocoa powder
2 tbsp flax powder mixed with 4 tbsp warm water
½ cup peanut or any nut butter
Few drops if vanilla extract
A little less than ¼ cup honey (65g)
1/4 cup choco chips + extra for sprinkling on top
1/2 teaspoon baking soda


Method;
Preheat oven 200C
Grease muffin cups
Mix flax powder with warm water and set aside. If making eggless mix 1 ½ tbsp flax powder with 3 tbsp water.
Mash banana and set aside.
Cream all ingredients except zucchini carrot and choco chips.
Mix grated zucchini carrot choco chips and mix well.
Spoon the batter ¾ full in muffin cups and bake for 25-30 min. U will see the muffin tops getting firmer or until toothpick inserted in centre comes out clean.
