Beetroot Halwa / One-pot Halwa recipe



Beetroot Halwa is similar to the very popular carrot halwa. Beetroot Halwa is an Indian dessert which is prepared in same way as we do in carrot halwa, in which grated roots is slowly cooked in milk, dry fruits, sugar and some ghee. To speed up the process, I have cooked shredded beet in pressure cooker and added mawa. Beetroot Halwa may sound a little strange to some, and some may love its richer and sharp taste. My family likes to have this unique dessert during occasions and festivals once in a while. This halwa is a very interesting way to include such a nutritious root in our meals, if your family doesn't like to eat beet in salad form. 


Beetroot Halwa

RECIPE 

Serves: 2-3 people

Prep time: 5 minutes

Cook time:  20 minutes

Tools: Mortar Pestle, Pressure cooker

INGREDIENTS 

1. Beetroot 2 nos. 

2. Mawa/ khowa 2 tbsp. 

3. Milk 1 cup. 

4. Ghee 2 tbsp. 

5. Sugar 1/2 cup.

6. Green Cardamom 3-4 nos. 

7. Cashews 5-6 nos.

8. Raisins 1 tbsp. 

9.Charoli 1 tbsp. 

10. Slivered Pistachios and almonds for garnish 2 tbsp

METHOD


1. Pick fresh and firm beetroot and wash in water for 3-4 times, until all the dirt is gone. Peel the skin and grate them finely as possible. 




2. Chop cashews, pistachios and almonds.

3. Crush green cardamoms in a mortar pestle.




4. Heat ghee in pressure pan. Saute chopped cashews, raisins and Charoli. Remove in a dish.


5. In the pressure pan with leftover ghee, add grated beet.

6. Mix beetroot and ghee so the grated root gets fully coated in ghee.




7. Saute for 3-4 minutes. By this time the beetroot will look slightly fried and the raw smell will be gone.

8. Add milk. Mix well and after few minutes of heating, cover the cooker lid.


Wait for 2 whistles and switch off the heat.


Open lid when pressure cools down naturally.

Switch on the heat. Beet looks soft and cooked, add crushed mawa and sugar. Cook till everything is incorporated.


Add cardamom powder and mix again while cooking on low heat.


When all the liquid is absorbed add fried and chopped dry fruits and nuts.

Serve cold or hot, it tastes rich and yummy any which way.
