Cinnamon Streusel Cake / Eggless Wheat Cake




Ensure to bake this cake in bigger batches, because there is a possibility that your neighbours would want to split, the aroma of cinnamon mixed with Walnut and ghee from your kitchen will drive them insane, it's not their fault.


Perfect cake for grown ups, can be had with your favorite beverage as evening snack or as an after dinner dessert with some scoops of your favorite ice cream. It is less sweet so you can serve as breakfast dish as well.

Streusel is a crumbly topping of flour, butter, and sugar that is baked on top of muffins, breads, pies, and cakes. In some cakes the mixture is laced between the layers to give a ribbon effect.

I have used Wheat flour, coconut sugar and ghee for the filling and used buttermilk and 1/2 tsp of extra Baking soda to replace eggs from the cake. If you like egg cakes, you can add 2 eggs and reduce the amount of buttermilk and also remove 1/2 tsp of Baking Soda form the recipe.

RECIPE



Servings: 4-6

Prep time: 10 min

Bake time: 40-50 min

Tools: Oven, Whisk, Loaf pan, 250 ml measuring cups

INGREDIENTS

For Wheat Streusel Filling

Cinnamon 2 tsp

Walnuts 1/4 cup

Wheat flour 2 tbsp

Coconut Sugar 3-4 tbsp

Ghee 1 tbsp

For the Cake

Wheat flour 1.5 cups

Baking powder 1 tsp

Baking Soda 1 tsp

Pinch of salt

Cinnamon 1 tsp

Buttermilk 1 cup

Brown sugar 1/2 cup

Ghee 1/4 cup

METHOD



1. Prepare cake tin by lining it with parchment paper, also leave some extra as overhang to lift the cake. As this cake has toppings, it is usually not inverted.

2. Preheat oven at 180°C atleast 10 minutes before preparing the batter.

3. For Filling, In a bowl, combine ghee, Brown Sugar, wheat flour Walnuts and Cinnamon.

4. Mix nicely and set aside for later.

5. Prepare the cake batter, take a large bowl and sift all the dry ingredients; wheat flour, Baking Soda, Baking Powder, Salt and cinnamon powder.

6. Do this several times, atleast 3-4 times. Set aside till you prepare the wet mixture.

7. In a mixing bowl, whisk the ghee and brown sugar together.

8. Once mixed add buttermilk and incorporate well.

9. Add in the sifted dry ingredients in 2-3 parts.

10. Make a smooth batter by folding gently. Do not over Mix or else the batter will start to develop gluten and the cake will be dense and undercooked.

11. In the loaf pan, pour half of the batter.

12. Level it with spatula or a spoon.

13  Sprinkle 3/4th of the filling mixture on the batter.

14. Pour the remaining of the batter and level it again.
15. Sprinkle the balance of the Streusel filling.

16. Place the baking pan into the center of the oven.

17. Bake for 40-45 min. Insert a toothpick to make sure it is baked.

18. Once done, take out of the oven and allow to stand for 10 minutes.

19. Gently lift with the overhanging parchment paper.

20. Serve warm or allow to cool and store for a later time.
