Pumpkin Bun

 


I am not sure about you all! But after tasting these soft and fluffy pumpkin buns, I am never going to make a bread without pumpkin!🎃😋

These delicious and soft wheat breads are so so amazing that I couldn't wait for them to cool. As soon as I took some decent pics, I just Stuffed my mouth with one. Potato, carrot and corn stuffing are perfectly complimenting with the buns 100%.

I am using a spicy stuffing for this, but it can be made sweet as well. 


RECIPE


Serves 8
Prep time 2 hours
Bake time 25
Tools: Oven, Baking tray, mixing bowl, kitchen scissors

INGREDIENTS

Pumpkin buns
Wheat flour 2 cups
Pumpkin puree 1/2 cup
Active Yeast 1 tsp
Salt 1 tsp
Jaggery powder 2 tsp
Turmeric powder 1/4 tsp
Peanut oil 2 tbsp
Milk + water 3/4 cup
Melted butter 3 tbsp
Chia seeds 2 tsp

Stuffing
Boiled potato 1
Grated carrot 1
Boiled sweet corn 1/4 cup
Grated cheese 1/4 cup
Salt 1 tsp
Red chilli powder 1/2 tsp
Garam masala 1/2 tsp
Coriander powder 1/2 tsp
Amchur powder 1/4 tsp


METHOD 





To a large mixing bowl add flour, salt, jaggery, active yeast, turmeric powder, oil and pumpkin puree. Mix everything together.





Knead a softer dough than chapati dough using milk and water mixture. Add half the butter while kneading the dough for richer texture.





Cover and keep the dough for 1 hour or until it doubles.








Mix potato, carrot, sweet corn kernels and cheese. Also add salt and seasonings and mix together. 

Divide into 8 parts and make even sized balls.





Once the dough has doubled, deflate it and divide into 8 equal parts.





Take one part of dough, using oil, spread it into a thick disc,  place one ball of stuffing, bring the edges together and seal. Grease your hands while doing so.





Make 6 slits around the ball and one hole in the centre for the steam to release.





Keep the buns in a well greased oven tray. Cover with kitchen towel and let them puff up for 1 hour. Preheat oven at 230 degrees centigrade, 10 minutes before proofing time is over.





After they have puffed up. Melt remaining butter and brush the top of buns with butter wash and sprinkle chia seeds.




Bake for 20 minutes or till the top is golden brown. 




The Stuffed Pumpkin buns are ready to enjoy.






Tips:

Use a fresh yeast. If there are some doubts, bloom them first in liquid and then Knead the dough with the yeast blend.

Preheating 10 minutes before putting the bread in oven is mandatory.

Bake them on top rack at highest temperature.

These can be made vegan by kneading the dough in any dairy free milk or water, and use an oil wash instead of butter wash. The taste will be still amazing. Skip cheese from the stuffing too.

Tiramisu Parle Vanilla Cake Dessert




Tiramisu is typically made using lady fingers, but to be honest I like this cake version much better. It's very easy to put together for parties and events without much of a fuss. It's a classic Italian dessert made with coffee soaked sponge cake which is layered between a sweet cheese cream frosting and dusted with cocoa powder.

RECIPE 

Serves 4-6
Prep time 10 minutes
Cook time 2 minutes 
Tools: pie pan, hand blender, mixing bowl, sauce pan, piping bag 

INGREDIENTS 

1. Instant Coffee powder
2. Water
3. Parle vanilla cake 1.5 packet
4. Cheese cream 150 g
5. Condensed Milk 100 g
6. Whipping cream 3/4 cup
7. Vanilla essence 1/2 tsp
8. Cocoa powder 2 tbsp




METHOD 

Heat water in a sauce pan and add coffee powder and brown sugar. Switch off flame when sugar dissolves. Cool it.

Beat Whipped cream till soft peaks.

Beat together all the contents to incorporate, whipped cream, cheese cream, condensed milk and vanilla essence.

Fill the prepared frosting in piping bag.



Arrange cake slices in a fridge safe bowl or pan. Drizzle coffee decoction.

Pipe with frosting. Smoothen out the top.

Dust the top with cocoa powder. Make any design or add chocolate shavings. Refrigerate to set and until serving time.

Once set for 2 hours slice and serve.




Tips: Plan and prepare with lot of love and you can make awesome Tiramisu cake.

Kachcha Chivda


Presenting Chandrapur's favorite street food, kachcha chivda means raw chivda. Flattened rice is mixed with crushed chilli garlic, roasted peanuts and phodni (tadka)

RECIPE 

Serves 3

Prep time  5 min

Cook time 10 min

Tools: Kadai, mixing plate


INGREDIENTS 

Poha (thin) 1 cup

Green chillies 3

Garlic 5

Coriander leaves 2 tbsp 

Peanut 2 tbsp

Peanut oil 3 tsp

Black mustard seeds 0.5 tsp

Salt 0.5 tsp

Turmeric powder 0.25 tsp

Lemon 1 no.


METHOD 



Crush green chilli and garlic, wash and chop coriander leaves.

Place a kadai on low heat, add oil and poha and roast for 2-3 minutes. Transfer it to a mixing  bowl or plate.

Wipe the pan with tissue. Add oil and toast peanuts for a minute by continuously stirring.

In the same kadai add oil, when it heats add mustard seeds. Let the seeds splutter. Switch off flame, add turmeric powder salt in the oil. To the plate with roasted poha add crushed chilli garlic, peanuts, coriander and tadka.

Kachcha Chivda is ready, Serve with a piece of lemon.

Tips: Spice level can be adjusted to ones liking.

Some people also like to add crushed ginger.Roasting poha is optional. Its typically used raw.

Buddha Pachadi Bowl

 





Authentic pachadi is served by mixing grated vegetables, seasonings and tadka. But being an influencer I like to eat and serve things differently😀


RECIPE

Serves: 2
Prep time: nil
Cook time: 2 min
Tools: tadka pan, mixing bowl, grater.

INGREDIENTS 

Curd 1 cup
Cream 2 tbsp
Salt as per taste 
White pepper powder as per taste 
Roasted cumin powder 1 tsp
Carrot grated 1/4 cup
Cucumber grated 1/4 cup
Beetroot grated 1/4 cup
Coriander leaves few leaves 2 tbsp 
Pomegranate arils 2 tbsp
Mustard seeds 1/4 tsp
Peanut oil 1 tsp
Hing 1 pinch
Curry leaves 3

METHOD 





Wash, peel the skin and grate carrot, beet and cucumber. Chop coriander.






Beat well curd, cream, white pepper powder, roasted cumin powder and salt.




In a tadka pan, heat oil, add mustard seeds. When it splutters add hing and curry leaves.




I like to enjoy pachadi in a little diff way. Pour the curd mixture. Add grated vegetables, pomegranate arils, coriander leaves. Sprinkle some pepper and roasted cumin powder and serve as a side or breakfast.

Or Serve in a new trendy way in a Buddha bowl and enjoy traditonal pachadi.

Tips: Beating curd gives smooth pachadi. Use thick and mildly sour curd. Adding cream gives creamy taste and texture.

Oats Chaas

 


Spiced oats chaas is a protein and calcium rich drink, keeps you hyderated, helps loose weight, good for diabetic and healthy snacking option.


RECIPE 

Serves: 4-5
Prep time: 25 min
Tools: Mixer, bowl




INGREDIENTS 

Curd 1 cup
Oats 2 tbsp
Green Chilli 1 no.
Ginger 1 inch piece
Black salt 1 tsp
Roasted cumin powder 1 tsp
Water 2.5 cups
Coriander leaves for garnish

METHOD 



Soak oats in half cup water for 10-20 minutes.




To a mixer jar add soaked oats, chopped chillies, chopped ginger, cumin powder and black salt.




Scrape sides of the jar and make a smooth paste.




Add curd and water. Blend well.




Buttermilk is ready. Keep in fridge until serving time.



Pour in serving glasses. Garnish with coriander leaves and serve.

Mirchi Bhajiya

 



Mirchi Bhajiyas are fried fritters made by dipping big green chillies in spiced gram flour batter. These make crunchy delicious tea time snack.


RECIPE 

Serves : 2


INGREDIENTS 

METHOD 







Wash and wipe chillies. Slit along the length and remove the seeds.



Mix amchur powder and salt in a small dish.



Fill few pinches of amchur mixture in the slits.





Take a mixing bowl, add gram flour, salt, carom seeds, chilli powder, cumin powder, baking soda. Make a thick batter using water.



Dip chilli in batter. Heat oil in a kadai.




Heat oil for frying. Put the filled chillies when oil is meduim hot. 




Fry until evenly golden brown. Remove in dish using tongs.

Tips: Crushing ajwain between palms releases lots of flavour and aroma.
Checking chillies for spice level is recommended before trying this dish.
Fry in medium hot oil, the insides will remain undercooked if the flame is high.
