One-pot Cabbage Rice

This simple Cabbage Rice recipe is unbelievably easy and ridiculously tasty.


Do you ever feel like not cooking that much because of the tiring long day you had?? or simply because you are not in the mood to spend hours in the kitchen!! 

But you still need to feed the hungry mouths! Right!!. So chuck that Chakla and Belan off and Pull out your Pressure Cooker and get ready for the most delicious and one-pot rice recipe.

This recipe is dedicated to a long lost friend. We worked together in 2002 in the same Bank, her name is Anu. After my marriage we some how lost touch and I don't know where she lives or anything about her.

She frequently brought this cabbage rice in her tiffin box, it was a closed knit small family inside our office, we worked together, ate together and laughed together. It was our daily ritual of sharing tiffin with others, and I used to simply love the simple yet, aromatic flavor of this rice.  I feel very nostalgic whenever I cook this rice, which I do very often, on my daughter's demand.

Cabbage is shredded for this recipe and added to the rice and the only source of spice is freshly ground black pepper, and a simple tempering of cumin seeds fills your kitchen with its aroma as soon as you open the cooker lid.

Tastes great as is or with coconut curry, South-Indian korma or Paneer Ghee Masala

RECIPE

Serves: 5
Prep time: 10 minutes
Cook time: 10 minutes 
Tools Needed: Pressure Cooker, mortar & pestle.

INGREDIENTS 

Black pepper corns 10-15

Cumin seeds 2 tsp

Salt to taste

Cooking Oil 2 tbsp

Cabbage 3/4 cup, shredded

Rice 1 cup

Coriander leaves for garnish 2 tbsp

Water 1 3/4 cup

METHOD

1. Wash rice and let sit until you prepare tempering for rice.

2. Wash and clean cabbage. Chop it in fine shreds to get 3/4 cup quantity.

3. Ground cumin and pepper pods coarsely and keep ready.




4. Heat oil in a pressure cooker, add ground spices. 

5. Add shredded cabbage on top of spices, mix and cook for 15 seconds.

6. Add salt and keep mixing.



7. Add the washed and drained rice and mix well.

8. Add 1 3/4 cups of water and let this come to a boil.

9. Place the Pressure Cooker lid. Let it come to a whistle and switch off the flame.



10. Garnish with coriander leaves. Serve hot.
