RECIPE
Serves 3
Prep time: 10 minutes
Cook time: 3 hours including setting time
Tools needed: Electric Beater, frying pan, rolling pin, parchment paper, piping bag and star nozzle.
INGREDIENTS
FOR CHOCOLATE MOUSSE
Chocolate ganache 1 cup
Chilled whipping cream 1/2 cup
Walnut Praline for garnish
FOR WALNUT PRALINE
Walnuts 1 cup
Brown sugar 3/4 cup
Butter 2 tsp
FOR DARK CHOCOLATE GANACHE
Fresh cream 50 grams
Dark chocolate 150 grams
METHOD
1. Heat cream in a Bain Marie. Add chopped dark chocolate and dip them in warm cream.
Remove on a board and chop them coarsely.
4. Heat brown sugar. Leave it unmixed until it melts.
5. Once melted fully add butter and mix.
7. Pour this onto the greased counter. With a greased rolling pin, flatten it evenly and as thin as possible. Do quickly before the Praline starts to set.
