Soft guava chunks gives the sweet fruity taste in every bite, crunch comes from the cucumber and addition of seeds and almond oil gives a nutty taste to the salad, making it filling and very yummy. isn't this a healthy way to munch on between meals.
I have a guava tree in my front yard and every 2 days I get to pluck 4-6 half ripe fruit. If we do not pluck them, and leave to ripen fully, birds and squirrels eat them up. So I leave 2 or 3 guavas for the cute friends and pluck others for us.
I was going through my vegetable basket, while thinking for ideas of what to make for breakfast this morning. I Saw some red and juicy tomatoes and yellowish soft guavas sitting there. I instantly thought of preparing a hearty salad with a zingy salad dressing which will be also protein rich.
The salad came out very nice, I liked the slight sweetness in each bite coming from raisins and guava, crunchiness from pomegranate, cucumber and capsicum. Thank God!! That I added Pumpkin seeds and flax meal, the seeds coated in salad dressing tasted divine. I have decided to add more pumpkin seeds next time when I make a salad like this one.
Vegan Guava Salad
RECIPE
Serves: 2
Prep time: 5 minutes
Cook time: none
Tools Needed: mixing bowl
Guava fruit 2 nos.
Tomato 1 nos.
Cucumber 2 nos.
Capsicum 1 nos.
Pomegranate arils 1/4 cup
Pumpkin seeds 2 tbsp
Flax meal 1/2 tsp, heaped
Himalayan salt to taste
Black pepper powder 1/4 tsp
Olive oil 1 tsp
Almond oil 1 tsp
Mint leaves 5-7
Lemon juice 1 tsp
Golden raisins 1 tbsp
Black raisins 1 tbsp
METHOD
To make flax meal, roast 1/4 cup flax seeds in a pan for 3-5 minutes. You will hear them splutter. Switch off flame and let seeds cool for few minutes. Ground to coarse or fine powder. Store in airtight clean container.
Wash guava, cucumber, tomato and capsicum.
Peel and chop Cucumber and guavas into chunky pieces. Chop capsicum and tomato in small cubes.
To a small bowl take both oils, add salt, flax meal, pepper powder and lemon juice. Mix well.
In a salad bowl put chopped guava, cucumber, capsicum, tomato.
Also add pomegranate arils, pumpkin seeds, mint leaves, golden and black raisins.
Add the prepared salad dressing and toss well so everything is well coated.
Keep in refrigerator till serving time.
