RECIPE

Servings: 4-5
Prep time: 10 min
Baking time: 40 min
Tools needed: Oven, wire whisk, Sieve, 6 inch cake tin.

INGREDIENTS 

1. Wheat flour 1 cup. 

2. Almond powder 2 tbsp. 

3. Fine dessicated coconut 2 tbsp. 

4. Baking powder 1/2 tsp. 

5. Coconut/Almond Milk 1 cup. 

6. Pinch salt. 

7. Apple cider vinegar 1 tbsp. 

8. Coconut oil 1/4 cup. 

9. Powder Jaggery 3/4 cup. 

10. Vanilla extract 1/2 tsp. 

11. Slivered Almonds 2 tbsp. 

12. Poppy seeds 2 tbsp.

METHOD 


1. Take a bowl and sieve wheat flour, salt and baking powder twice or thrice. Add almond flour and dessicated coconut and roughly mix. Set aside.  

2. In a sauce pan heat coconut milk and jaggery until jaggery dissolves completely. Cool the mixture. 

3. In a large mixing bowl put oil, vanilla extract and apple cider vinegar to mix well. 

4. Add the cooled coconut milk mixture to the bowl with oil to prepare wet ingredients. 

5. Before whipping up the batter, Start the oven and Preheat @180 degrees centigrade. 

6. Grease a 6 inch cake pan. Dust and coat with wheat flour. 

7. Add flour mixture to wet ingredients in 2-3 parts. Mix by cut and fold method. Do not overmix, just until everything is incorporated. 

8. Pour the batter in cake pan. 

9. Sprinkle the poppy seeds and almonds on top. 

10. Place in the preheating oven. Bake for 25-30 minutes or till toothpick inserted comes out clean. 

11. After cake is baked, remove from oven and keep the pan over a wire rack to cool for 5-10 minutes. 

12. Invert on a plate and remove the cake pan and let cool on wire rack for sometime. 

13. Vegan Wheat Cake is ready.
