Palak Chaat/ Fried Spinach Salad/ Fries Overload Chaat

It was not only them, even I was not in the mood for chai-cookies. I went and googled my fridge basket to see what to make.
Amidst all vegetables, there was a small bag of leftover palak after making dal palak the other day. I quickly whipped the batter, dipped palak leaves in it, fried it and added a few toppings.
Told the kids that this was a new Recipe which is trending these days "The Fries overload" and this is an "Indian Fries Overload".
Kids face lit up when they saw the dish and they were amazed to bite into the tangy and crunchy, burst of flavors when they put one loaded palak fry, in their mouth. so without further adieu lets jut dig into it!!😋
RECIPE

Preparation time just 2 minutes
Cooking time 10 minutes
Tools needed: Frying pan.
INGREDIENTS:
1. Spinach leaves 10-12 nos.
2. Chick Pea flour 1/2 Cup.
3. Rice flour 1/4 cup.
4. Salt as per taste.
5. Chilli powder as per taste.
6. Water 1/2 cup or more.
7. Cooking oil 1 cup for frying.
8. Thick curd 1 cup.
9. Onion 1 nos. Chopped
10. Capsicum 1/2 chopped.
11. Cabbage chopped 1/4 cup.
12. Pomegranate arils 1/2 cup.
13. Sev 1/4 cup.
14. Coriander leaves chopped 2 tbsp.
15. Chaat masala powder as per taste.
Method:
1. Take a mixing bowl and put chick pea and rice flour, add some salt and chilli powder.
2. Mix, then add water and prepare a liquidy batter.
3. Heat oil in a pan.
4. Wash and wipe spinach leaves. Dip in batter.
5. Add in medium hot oil and fry until golden and crunchy.
6. Remove in a dish and fry all the leaves.
7. Prepare chaat by serving one dish per person. Spread the crunchy leaves on dish.
8. Drizzle slightly beaten curd.
9. Spread chopped onion, capsicum, shredded cabbage, chopped coriander leaves.
10. Garnish with some sev and pomegranate arils.
11. Finally Sprinkle some salt, chilli powder and chaat masala.
12. Serve immediately.
