Puttu Podi n coconut muffins
(Roasted Rice flour n coconut muffins)

These Delicious muffins are
Gluten free, sugarfree and also Vegan. 

They are crunchy on outside and soft, tender and light from inside.

I have saved this recipe from a blog allrecipes.co.in (in the name: coconut muffins), May be around 2010.

At that time i was always on a search for recipes that are healthy, that can be given in lunch box to a 6 yr old, also can be fed to my one year old toddler (😊😊 and I can also eat without guilt )
 
This is one of such verrrrryyyy special recipes.

I make them till today with many variations.

I always put fruits, dry fruits or vegetables whatever I have handy.
I use milk instead of water for kids. But water works fine too.

The original recipe has no oil and no banana mash in it, but I found that without oil, muffins were little sticky from inside. Banana mash compliments with the flavour, and it also gives a little body to the muffins.

Here I m sharing how I make them; 
Ingredients required are; (makes 12 muffins)
 
2 tbspn coconut oil
1 1/2 cup coconut milk 
1-2 tablespoon water
1 cup puttu podi (Rice flour)
1 cups fresh or dessicated coconut
1 tsp salt
1 mashed banana
Some chopped strawberries

Grease muffin tray with coconut oil


Mash banana and mix with coconut oil in a large bowl then add coconut milk+water +puttu podi + ground coconut + salt.

Lastly add chopped strawberries and mix.

This mixture will be thicker than idli batter. Scoop the mixture into the muffin cups. Top with some more chopped berries and bake for 30 min or until golden brown color.
