Organic Poha



Organic Poha is made of de-husked and flattened rice grains. It acts as a compliment for a high protein, fibre diet. A very common breakfast ingredient, it is free from any kind of chemicals or polishing. Organic Poha is a great source of protein, calcium and iron. Apart from these, a bowl of Organic Poha contains dietary fibres, vitamin A & C and all the nutrients that are necessary for your body.

Regular white poha is washed in drinking water, strained and left to soak in its retained water for few minutes. Till the vegetable are prepared and sauted, in the meantime poha gets soaked to add to the seasonings.

But as the organic poha flakes are denser than the regular bleached poha available in stores, these need to be soaked in some water for longer time to get soft.

Organic Poha


RECIPE

Serves: 2-3 people

Prep time: 10 minutes

Cook time: 10 minutes

Tools: kadai, strainer.



INGREDIENTS

Organic Poha 1 cup.

Green chillies 2-3.

Onion 1 large.

Curry leaves 4-5.

Peanut oil 1 tbsp.

Mustard seeds 1 tsp.

Coriander leaves 2 tbsp.

Peanuts 2 tbsp.

Turmeric powder 1/4 tsp.

Himalayan salt 1 tsp or to taste.

Half a lemon.


METHOD

Take poha in a bowl and wash it 2-3 times to remove impurities. Leave 1/4 cup water in the poha. Let this sit for 5-10 minutes. Mix the poha up and down once.




Meanwhile wash and chop onion, green chillies and coriander.



After 10 minutes, strain the poha and set aside.

Prepare seasoning, place a kadai on heat and add oil.

Put peanuts and let it fry till they change colour slightly.



Push the peanuts to a side and add mustard seeds.

Once they splutter add curry leaves chilies and onion. Fry till onions become pink.

Add strained poha, salt, turmeric powder and coriander leaves.




Mix everything and lower the flame.

Cover kadai with lid just for a minute so all the flavours are fused together.



Switch off the flame. Squeeze half a lemon. Garnish with some pomegranate arils and serve hot.
