Pazham Pori is a South-Indian snack recipe, specially from Kerala Cuisine. Banana slices are coated in maida batter or Idli batter and then deep fried. This is also a vegan banana fritters recipe. Bananas used to make these fritters is of a little different variety that are large and are firm even when ripe. They are called Nendram Payam, which have a slight tangy after taste. They are used to make both the banana chips when in raw form and these fritters when they have ripened.
This recipe can be made in mixture of wheat and rice flour if you don't wish to go through all the cumbersome process of making idli batter.
Do not use bananas which are too ripe or very soft. In my recipe also I have used ripe bananas which are sweet and yet firm.

INGREDIENTS idli batter
1. Rice 3/4 cup.
2. Udad dal 1/4 cup.
3. Fenugreek seeds 1/2 tsp.
4. Ripe firm bananas 3.
5. Turmeric powder 1/4 tsp.
6. Brown sugar 1 tsp.
7. Salt to taste.
8. Dessicated coconut 1 tsp.
9. oil for frying 1 cup.
INGREDIENTS instant batter
1. Wheat flour 1 cup.
2. Rice flour 2 tbsp.
3. Corn starch 2 tsp.
4. Ripe firm bananas 3.
5. Turmeric powder 1/4 tsp.
6. Brown sugar 1 tsp.
7. Salt to taste.
8. Dessicated coconut 1 tsp.
9. oil for frying 1 cup.
METHOD idli batter
Soak rice and fenugreek seeds in lukewarm water and udad dal in normal water for 3 hours.
Soak rice and fenugreek seeds in lukewarm water and udad dal in normal water for 3 hours.
Grind rice, udad dal and fenugreek seeds into a thick and smooth batter using very little or no water.
Remove 1 cup batter to make fritters.
Keep the leftover batter in a warm place for 8 hours to ferment.
METHOD instant batter
In a mixing bowl add wheat flour, rice flour, corn starch and 1/4 cup water. Beat well and make a smooth batter.
Rest of the steps are common in both recipes.
To the batter add salt, brown sugar and turmeric to the idli batter and mix well.
Slice firm and sweet bananas length wise.
Dip banana slices in the batter.
Evenly coat bananas in the batter.
Keep oil on heat for frying.
Gently slide coated bananas and fry.
Fry until they are golden.
Sprinkle dessicated coconut and serve Pazham Poris immediately.
yummy Recipe! both options are good, even if I don't have Idli batter, i can still try with wheat flour.
