Do try this healthy and delicious cake. This is a wheat cake recipe with milk powder and lots of dry fruits and nuts.
It's so rich and soft, you can hardly stop after having a bite.

Eggless FruitNut Atta Cake

2 cups wheat flour
1 cup milk powder
1 teaspoon baking soda
1 teaspoon baking powder
1 1/4 cup milk
3/4 cup brown sugar
3/4 cup melted butter
1/2 teaspoon vanilla extract
2 tablespoons honey
1/2 cup mixed, chopped nuts and dry fruits
Steps
Sift together wheat flour, baking soda and baking powder
In a bowl add room temperature milk, honey, brown sugar, butter and vanilla extract. Mix well with a wire whisk. Do not add all the milk at once, keep 1/4 cup aside to add later if required.
Preheat oven at this moment @180C for atleast 12 minutes. So till we prepare our batter the oven will be ready too.
Sprinkle 2 tablespoons of plain flour over chopped nuts and dry fruits and toss to coat them well. Keep aside till our batter is getting ready.
Mix milk powder to the liquid mixture.
Add flour mixture in 2-3 portions.
Remember to not to overbeat the mixture.
Add the fruits and nuts and mix well to incorporate.
Pour in a greased and lined baking tray. I used a big loaf pan for this. It's 11×5 inch tray.
Tap the tray on the counter slightly. Put it in oven and let it bake for atleast 40 minutes.
Insert a toothpick and check. It should come out clean, it means our cake is baked. Cool on wire rack for 10 minutes.
Slice and serve, best starter and side dish for any parties.
