Strawberry Banana Oats Flapjacks


Strawberry and banana fruits pair very well together. The combination tastes awesome! Me and kids love banana Strawberry shakes in the season, So thought of combining these two in these sqaures, and fruit bars are again very much loved by my kids.


I used only oats as flour and honey + mashed bananas as sweetner. This soft and chewy strawberry Banana oat squares are perfect healthy breakfast or snack!

This was my first time making chia seed jam, and I’m pretty impressed with the nutty crunch from the seeds ! Will try to infuse chia seeds in more of my homemade fruit jams in future.

Strawberry Banana Oats Flapjacks

RECIPE

Serves: 4

Prep time: 5-10 minutes 

Bake time: 40 minutes

Tools Needed: Oven, Baking Tray, sauce pan

INGREDIENTS

For sugar free strawberry jam

400 grams chopped Strawberries
3 tablespoons Chia seeds
3 tablespoons Honey or maple syrup

For Banana oat flapjacks

3 Bananas
1 & 1/2 cup oats
1 cup powdered oats
3 tablespoons lightly toasted oats
1 tsp baking powder
1/4 cup honey or maple syrup
1 tsp vanilla extract
1/8 tsp dry ginger powder

METHOD

Making Strawberry chia jam: Hull and chop the strawberries. Heat a pan add berries and honey

Cook till the fruit gets soft, around 10-15 minutes. Then add chia seeds and cook further for 5 minutes.

Switch off flame. Let the jam cool down a little, it also thickens as it cools.

Oat banana Squares: Preheat oven at 180C

Line a rectangle or square baking dish. For easy removal let the parchment paper overhang from sides of the pan.

Place 1 cup of oats in a food processor or blender, and process until they are finely. Mash bananas using a fork or blend them if you like lump free, like I did.

Transfer the oat flour to a large mixing bowl, and add the remaining oats, ginger powder and baking powder, mixing well.

Add the mashed bananas, honey, and vanilla extract, and mix until everything is well combined and a dough is formed.

Transfer 2/3 of the mixture into your prepared baking pan, using your fingers to ensure that it is pressed down tightly and evenly.

Bake for 10 minutes.

Spoon chia jam over the surface, and use a spatula or knife to spread it evenly. I generously spread almost the 3/4 of the total jam I prepared. You may add the whole thing too.

Add toasted oats to the remaining oat mixture and sprinkle on top, pressing down lightly.

Oats crisp mixture to spread on top + strawberry jam

Bake on middle rack for 30 minutes and 10 minutes on the upper rack. Until the top turns light golden brown.

Don't flip this bake over, it will destroy the top layer of the flapjacks. Gently lift the over hanging parchment paper to remove it from the pan.

Let them cool a bit before slicing. 

Serve these yummy goey bites for breakfast or as a dessert after lunch or dinner.
