Oatmeal Fig flapjacks are a chewy, fig-filled bars made lightly sweet. They look like the Milano cookies we get in market, but homemade stuff are always better.
I am really proud of the outcome. I had this recipe saved somewhere using dates paste, as I was having plenty of figs in hand, I just replaced dates with figs jam.
I could prepare the figs jam in no time, they go very well with the earthy flavor coming from baked oats. I drizzled some lime juice to give a sharp taste to the sweet figs paste.
These bars are so tasty with perfect crunchy top, soft sweet middle and crusty base. These flapjacks are so versatile, you can easily have them as a Sunday morning breakfast or they would be perfect for an evening tea time snack. They can be prepared ahead of time and be served as dessert for party.

Oats & Figs Flapjacks
RECIPE
Yields: 8-10 bars

INGREDIENTS
Dried figs, chopped 3/4 cup
Water 1/2 cup
Juice of 1 lemon
Instant oats 3/4 cup
Wheat flour 1/2 cup
Baking soda 1/4 tsp
Brown sugar 2 tbsp
Butter 2 tbsp
Water 1/2 cup
Juice of 1 lemon

METHOD
In a bowl mix together instant oats, wheat flour, baking soda and brown sugar.
Melt butter and mix with the flour. Add cream to bring everything together like a cookie dough.
Divide the dough in two portions.
Preheat oven @170C.
Grease a cake tin 6×4 inch rectangle tin.
Press one portion of dough onto the bottom of the tin and spread it as evenly as possible.
Spread the figs sauce onto the first layer of dough that in cake tin.
Now shape the second portion of dough on a cutting board into a rectangle that's fits in the pan and place over the sauce. Press gently.

In a sauce pan heat chopped dried figs with water and juice of 1 lemon till the water thickens a little.
Spread the figs sauce onto the first layer of dough that in cake tin.
Now shape the second portion of dough on a cutting board into a rectangle that's fits in the pan and place over the sauce. Press gently.
Sprinkle some brown sugar on top.
Bake for 25 minutes.
Cool and invert over a chopping board.
Slice and serve.
