Dal and Moringa leaves short bread cookies


RECIPE 

Yields 15-18 biscuits
Prep time: 5 minutes 
Bake time: 15 minutes
Tools needed: Oven, Wire whisk, baking tray

INGREDIENTS 

1/2 cup Wheat flour
1/2 cup Bengal gram dal powdered
1/2 cup Chick pea flour
1/4 cup Jaggery powder
1/2 cup Almond flour
1 cup tender moringa leaves
1 teaspoon fennel powder
2 tablespoons coconut oil
2 tablespoon flax powder
Pinch salt
1/4 teaspoon Baking powder
few spoons Water


METHOD
Preheat oven @160℃. Wash the tender leaves 2-3 times before using.

Also destem them. If leaves are too small add them directly without chopping or else chop them before adding to the dough.

In a mixing jug, whisk together oil and jaggery till well incorporated.

In a bowl take all the flours, baking powder, flax powder and mix with fork. Also add in the leaves and mix well.

To floura add the oil and jaggery mixture and combine to form a dough.

Sprinkle water if the dough is dry.

Roll the dough on a floured surface and cut in desired shape.

Arrange on a baking tray and bake for 15 minutes.

Cool and store in airtight containers and enjoy these lightly sweet and delicious dal cookies any time of the day.
