Banana Walnut Loaf

 

Whenever there is a party in the house our mind is boggling with list of chores to do, specially with the list of food we are going to prepare.

This pressure increases all the more,  when the guests are going to be the friends of our little ones.

Not only the food should be tasty, but it should also be healthy.

So here's one healthy and very simple easy-peasy bake, that you can prepare ahead of time and store in airtight containers for your side dishes or starters.

Whole Wheat Banana Walnut loaf

RECIPE

Serves 4
Prep time : 10 minutes
Bake time: 45 minutes
Tools Needed: Oven, wire whisk

INGREDIENTS

1.5 cups whole wheat flour

1/4 tsp salt

1/4 tsp baking soda

1.5 tsp baking powder

3/4 cup light brown sugar

1/3 cup oil

2 ripe bananas

3/4 cup milk

1 tsp Vanilla or banana essence

1/2 cup chopped walnuts

METHOD

Sieve the dry ingredients, flour, baking powder, baking soda and salt. Do this atleast twice to thrice for airy texture.

Prepare a loaf pan by greasing and lining. 

Preheat oven @160°C.


Mash bananas with the help of a fork.


In a bowl mix banana mash, brown sugar and oil. Mix well.

Add milk and essence to the banana mixture and beat again.


Add flour mixture to the banana mixture in 3 portions by cut and fold method.

Add chopped walnuts and gently fold. Batter is ready.


Pour in the prepared pan.

Sprinkle chopped walnuts kept aside for garnish on top.

Place in preheated oven and bake for 45-50 minutes until crust becomes brown and toothpick inserted in the centre comes out clean.


Don't over bake and keep checking after 40 minutes. Bake time may also differ as per the size of the baking pan, flatter the pan, lesser time taken to bake. All ovens and its temperature works differently.

Once cake is baked, remove from oven and

place the loaf pan over a wire rack, for the pan to cool down a little.

Remove the loaf with the help of the hanging parchment paper and again keep over wire rack. Let it cool down. 

Cut the loaf with the help of a serrated knife to get clean slices.

Serve your guests, these yummy slices of heaven along with your favourite beverage.
