Vegan Unniyappam (Sweet Appams)



Happy Onam, a harvest festival celebrated over 10 days, marks the homecoming of the mythical King Mahabali. Considered one of the biggest festivals in the southern state of Kerala, it is marked with much gaiety.

A major highlight of the festival is the Onam Sadhya, a scrumptious, lavish meal served on a banana leaf.

Sharing one of the sweet snack served with the elaborate sadya,,, made it vegan for a friend by cooking it coconut oil, which gave a very nutty taste to the appams😋

♡ Vegan Unniyappam ♡

RECIPE

Yields: 30 small appams
Prep time: 120 minutes of soaking
Cook time: 15 minutes
Tools: Mixer grinder, Appam pan/frying pan

INGREDIENTS 

Raw rice 1/2 cup
Wheat flour 1 cups 
Jaggery crushed 3/4 cup
Banana 1/4 piece 
Fresh coconut 1/2 cup
Cardamom powder 1/4 tsp
Coconut 2-3 tbsp For shallow frying
Sesame seeds 1 tbsp






METHOD


1. Wash and soak rice in normal water for 1 1/2 to 2 hours. I've used the small cup to measure all ingredients.




2. Meanwhile break open a coconut and chop the fruit into small pieces. Chop or crush jaggery to small chunks. 






3. After 2 hours, strain rice and discard the water. 

4. Put rice in a mixer jar, along with banana, chopped coconut, cardamom powder, jaggery and grind to a semi smooth paste. (It will be a little like barik rava texture)








5. Transfer the paste to a bowl and add flour. Mix with a spoon don't use grinder for this. Add water to adjust thickness. Batter should be likebthick idli batter. 

6. Add sesame seeds and mix to combine.






6. Leave on counter for 5 minutes.

7. Until then, heat appam pan. Put 1/4 tsp oil in each cavity. 










8. On meduim heat, pour a 1 tablespoon of batter in each cavity and cook covered for 1 minute.

9. Using a skewer or toothpick turn the appams over. Let cook on other side as well.

10. Remove on a dish. Prasadam is ready.




Notes and Tips :

1. Overmixing with wheat flour will result in uncooked insides. So mix gently.

2. You can deep fry these like bhajiyas if you don't have appam pan.
