Mushroom Baked Frittata

 



Frittata is an egg-based Italian dish similar to an omelette or a crustless quiche, enriched with additional ingredients such as meats, cheeses, or vegetables. The word frittata is Italian and roughly translates to "fried".

I have added chopped mushrooms, onion and potato as topping, seasoned with some Italian spices and herbs. Whipped up eggs along with cream cheese and cheddar cheese. 





RECIPE
Serves: 2
Prep time: 5 minutes
Bake time: 20 minutes
Tools: Oven, 5 inch baking pan, Frying pan

INGREDIENTS

Mushroom 3-4 nos.
Onion 1 medium size.
Potato 1 medium size.
Coriander leaves 2 tbsp.
Cheddar Cheese 2 tbsp.
Cream cheese 2 tbsp.
Eggs 5 nos.
Salt to taste.
Black pepper to taste.
Chili flakes 1 tsp.
Italian seasoning 1 tsp.
Garlic powder 1/4 tsp.
Onion powder 1/4 tsp.
Olive or any preferred oil 1 tbsp.




1. Wash and chop onion, potato, coriander and mushrooms. Grate cheese and scramble cream cheese.

2. Break eggs in a bowl, add salt, seasonings, black pepper, chili flakes, garlic and onion powder, coriander leaves, grated cheese and cram cheese.



3. Beat all well to incorporate. 

4. Keep a pan on heat, add some oil. 




5. Add chopped onion, potato and mushroom. Season with black pepper, chili flakes and salt. 

6. Saute to semi cook the veggies. 



7. Grease the pan lightly with drops of oil. Preheat oven @200°C.  



8. Layer the semi cooked vegetables evenly in bottom of the pan.



9. Pour the beaten egg mixture. 



10. Place in preheating oven and bake for 20 minutes. 

11. Remove from oven, slice and serve immediately.
