Vegan Papaya Halwa
Semi ripe papaya 1 kg
Powdered jaggery 3 tbsp
Pinch of salt
Almond cashew chopped 3 tbsp
Pumkin seeds 2 tbsp
Melon seeds 2 tbsp
Semi ripe papaya.
Wash and remove skin of the fruit and grate it.
Heat a pan and add the grated papaya.
Cover the pan and let it cook in its own moisture or add few tablespoons of water. You may also steam cook the grated fruit. My fruit was 80% ripe so it cooked very instantly without any water.
Add powdered jaggery salt and mix well. Cover again with lid and flavours infuse.
When you are happy with the texture, remove the lid. Once the extra moisture has evaporated switch off the flame.
Add chopped nuts and seeds.
Serve hot
