Kashmiri Pink Tea
Serves: 2
Prep time: 2 hours to set Ice cubes
Cook time: 30 minutes
Tools: Heavy bottom pan, Tea strainer.
INGREDIENTS
For Kawa
Green Tea 2 tsp
Water 1.5 cups divided
Ice cubes 1.5 cups divided
Star anise 1 small
Green cardamom 4 nos.
Pinch of salt
Baking soda 1/4 tsp
For 2 cups pink tea
Kawa 1/4 cup
Milk 1 3/4 cup
Sugar as per taste
Almonds 4-5 nos.
METHOD
1. Set enough Ice cubes for the recipe in advance.
2. Take a heavy bottom pan and add green tea leaves, Star anise, cardamom.
3. Pour 1/2 cup water and put 1/2 cup ice.
4. Also put salt and baking soda. Switch on the heat.
5. Boil and lower the flame, reduce this tea mixture to half of its quantity.

6. Second time pour 1/2 cup water and put 1/2 cup ice cubes.
7. Boil on low heat till it again reduces to half of it's quantity.

8. After it has reduced for second time again add the last 1/2 cup water and 1/2 cup ice cubes.
9. Boil it till again its has reduced to 3/4 of its quantity.
10. Kawa is ready, switch off the heat.
11. Strain the mixture into a container.
12. Make Kashmiri Pink Tea with this Kawa and store the rest in a glass jar and keep refrigerated until next use.
13. Slice almonds for garnish.
14. To make 2 cups pink tea, heat 1+3/4 milk and sugar.
15. Mix 1/4 cup kawa.
16. Serve tea in cups and garnish with almonds.
