Savoury Muffins from Oats and Semolina

RECIPE
Serves: 4-5
Baking time: 20-30 minutes
Tools needed: Oven, wire whisk, sauce pan, muffin tray
INGREDIENTS
Pinch Garam masala powder
Pinch Coriander powder
1 teaspoon Chaat masala
Salt as per taste
Pinch Turmeric powder
Pinch Aesofotida
1 teaspoon cumin seeds
2 tablespoons oil/ghee
1 teaspoon Black pepper powder
1 teaspoon baking soda
3/4 cup curd
3/4 cup water
1 teaspoon dill leaves, chopped
2 tablespoons Coriander leaves, chopped
1 large onion chopped
1/2 cup green peas
1/2 cup sweet corn
10-15 Cherry tomatoes, chopped
3/4 cup Semolina
3/4 cup oats
METHOD
Dry roast oats and semolina for 2-3 minutes. Remove in a bowl
Add soda, salt, curd, 1 tablespoon oil/ghee and water to the mixture. Mix and set aside for some time.
Preheat oven @180C after adding curd and water the mixture started bubbling.
In a pan heat remaining 2 tablespoon oil or ghee and add cumin seeds, aesofotida and fry.
Add onion and saute till golden brown.
Add the chopped vegetables. You can add any veggies of your choice like mushrooms, grated carrot etc...
Add all the spices. Here I have used Indian spices but you can always use any flavour of your choice like pizza seasonings, ginger-garlic paste etc....
Mix these with oats and sooji mixture.
Also add your chopped dill and coriander leaves and mix together well.
Pour the mixture in loaf or cake tin or in muffin cups like me and bake for 20 minutes. If baking in cake or loaf tin then the baking time will increase up to 30-40 minutes.
Bake until toothpick Inserted comes out clean. Serve hot with sauce or chutney or as is.
My family enjoyed this as an evening snack with tea😃
