Jamun Ice Cream / Black Plum Ice Cream




You  can find jamun everywhere these days, as markets are loaded with this fruit, you can't help but buy them.

Black Plum or Jamuns are extremely versatile, you can play around with them in the kitchen and turn them into jams, milkshakes, juices, or simply add them to vegetable or fruit salads. One of which is also an Ice cream recipe.

Make this tarty sweet Ice cream made in my version. I have used evaporated milk in place of condensed milk. If you have condensed milk you may use that instead.

Also I used some whipping cream, to make the ice cream a little firmer and smoother.

RECIPE

Yields: 10 medium scoops
Prep time: 30 minutes
Setting time: 4 hours/over night
Tools: Mixer grinder, sauce pan, freezer safe container, cling wrap, beater.

INGREDIENTS

Black plums/Jamuns 250 grams
Sugar 2-3 tbsp
Evaporated milk/condensed milk 2 cups
Chilled Whipping cream 3/4 cup
Choco chips 1/2 cup
Full cream milk, for evaporated milk

METHOD

Take full cream milk and keep on low flame and let it reduce to half the total quantity. You will get approximately 2 cups of milk i.e. 500 ml milk for the recipe.

Wash, pat dry and deseed the fruit.


Put it in a pan with sugar. Adjust sweetness by tasting the fruit accordingly. Let it boil and get soft in its own juices. Liquid will evaporate in 10 minutes or so.



Cool this fruit mixture.

In a mixer jar add evaporated milk and jamuns. Blend lightly to mix.

In a bowl take chilled whipping cream, beat until stiff peaks form.

Add the blended fruit and milk with whipped cream.

Put choco chips and add everything to incorporate.

Pour the mixture in a freezer safe container.

Cover with cling film and put in freezer for 5 hours or Over night.

Next morning ice cream is ready to be scooped.
