Chocolate Chip Coffee loaf cake /Eggless


Healthy and very tasty Coffee loaf cake, as it is made from milled wheat flour and sweetened with organic jaggery. Perfect for tea time snacking or as weekend breakfast. My kids and family liked the dense texture and ting of coffee flavour.

Serves 4
Prep time: 10 minutes
Bake time: 30 minutes
Tools needed: Oven, medium size loaf pan, baking paper.


INGREDIENTS 

1 cup  wheat flour

1 tablespoon arrowroot powder

4 tablespoons curd

Pinch salt

1/4 teaspoon Baking powder

2 tablespoons Butter

1/2 teaspoon Baking soda

2 tablespoons Ghee

2 teaspoons Instant coffee powder

1 teaspoon Vanilla extract

handful Chocolate chips

1/4 cup Milk

1/2 cup grated/ powdered jaggery

METHOD

1. Preheat oven at 180C for 12-15 minutes.

2. Warm 1/4 cup milk and add coffee powder, mix and keep aside.

3. Mix wheat flour, arrowroot powder and salt. Sift 3-4 times and set aside.

4. In a bowl mix curd and mix jaggery powder(I used organic jaggery and let it melt well in curd), add baking powder and soda and leave it for 2-3 minutes to bubble.

5. Now after 2-3 minutes add melted butter and ghee, vanilla extract and mix.

6. Add flour and coffee to this mixture by alternating in 2-3 portions.

7. Pour the batter in the prepared loaf pan and bake for 30 minutes.

8. After 30 minutes insert a skewer or toothpick and check if it comes out clean. Or bake for another 10 minutes.

9. Cool on rack for 5 minutes and remove from pan. Serve warm or cool and store in airtight container for 2-3 days.
