Walnut Katli | Walnut Jaggery bars

Concerned about the quality of ingredients used in market bought sweets and worried with the harms that refined sugars can cause, I try to make sweets for my family at home.

Walnut gives this kathli a rustic brown colour and an earthy tinge of flavor which everyone in family simply loved.

This one was on my bucket list since long time. I always thought that making kathli will be tiresome and complicated, but it was very easy to make and took very less effort and time.


Walnut Katli | Walnut Jaggery bars

RECIPE

Yields: 12-15 pieces
Prep times: 2 minutes
Cooking time: 15 minutes 
Tools needed: Kadai/Wok, parchment paper


INGREDIENTS

1 cup Walnuts

1 cup Cashewnuts 

1 cup powdered jaggery

1/4 cup water 

Silverleaf /powdered nuts for garnish (Optional)

METHOD

Refrigerating the nuts overnight helps in the next step. So I recommend you plan and keep them night before.

Powder walnuts. Sift the powdered walnuts. 

Take the coarse leftovers in mixer again, pulse and sift. Repeat until you achieve desired and even texture.

Repeat same with cashewnuts as well.


Remove all the bigger and chunkier nuts and use them in Porridge or other dishes.

After grinding and sifting all the nuts now you are almost half way through.

In a pan add jaggery and water. Boil mixture but stirring in intervals.

Check for 1 string consistency. 


Add the nuts powder and mix until mixture leaves sides.

Remove on a parchment paper. Place another parchment paper on top.


Roll and flatten evenly. Remove the top parchment.

Garnish with chopped/slivered nuts or with silverleaf like me.

Cut in desired shape once cooled.
