Masala Chaas (Spiced Buttermilk)

 




Masala Chaas is a tasty twist to regular plain buttermilk. I love to have this drink to reduce my intake of hot beverages. It makes a healthy, nice snacking option.


RECIPE 

Serves: 3
Prep time: 2 minutes 
Tools: Mixer grinder, kitchen scissors.

INGREDIENTS 

Ginger 1 inch piece
Coriander 3 tbsp
Green Chillies 1 no.
Black salt 1 tsp
Curd 1 cup
Water 1 cup



METHOD 

Wash and clean Ginger, chilli and coriander.

Roughly chop and add to mixer grinder along with black salt.

Crush these first.

Add curd, water and blend. 

Pour and serve.

Beetroot Pachadi /Raitha



In last couple of days I've been awestruck and intrigued by the range of Kerala Cuisine .

I myself tried some 51 dishes and posted for the occasion of Onam as Onasadya (you can find pictures on my feed)

Yesterday while shopping for vegetables the vendor was cutting these deep red roots and attracting so many people to his stall. I was also one of them☺☺ I asked him to cut one for me to take home for my shoot.

Made these yumm Kerala style pachadi (its a form of raitha) today for breakfast. Googled for a recipe and found this awesome recipe by Anupama Paliwal @mygingergarlickitchen

RECIPE

Serves: 2
Prep time: 10 min
Cook time: 10 min
Tools: Mixer grinder, bowl, tadka pan.

INGREDIENTS 

Beetroot 1 large piece
Pinch of turmeric
Curd
Chana daal 1 tsp
Urad daal 1 tsp
Coconut 2 tbsp
GReen chillies 2 nos
Ginger 1 inch 
Thick Curd 3/4 cup
Salt as to taste
Coconut oil 3 tsp
Mustard seeds 1/2 tsp
Dry red chilies 2 nos.
Curry leaves 4 nos.



METHOD




In pressure cooker boil chopped beet 1 cup with a pinch of turmeric powder.




Dry roast chana dal and udad dal and cool it.




To a mixer jar add boiled drained beet, shredded coconut, green chillies, ginger, roasted dals, salt and grind to smooth paste.




Prepare tempering of coconut oil, mustard seeds, dry red chilies and curry leaves.







Take a bowl mix beet coconut puree and thick curd. Pour tempering and serve.

Oats Apple Gateau



💪Loaded with fresh grated apples 🍎 this gateau or Apple Cake is just uff uff!! 😺😻

I was shooting for the recipe video of this cake, but believe me!! I couldn't stop or wait for the cake to cool👿, I simply dived in. The aroma while it was baking was such that nobody could🤷‍♀️ 🤦‍♀️

My son was playing outside 🙆and he came inside running🏃‍♂️, mama bangaya kya cake,,, han han?? My friends 🤼‍♂️can smell it from far away, they also want it😬🤤 

🛎Just a simple cake with loads of fruit 😋 no rocket science 👩‍🚀🚀

This is a combination of all the wholesome ingredients you can think of, just whipped up jaggery with homemade curd, some 🌻oil and mixed with 🌾Oats and whole wheat flour and added lots and lots of grates of the red shining juicy fruit,, because I don't want to give 👨‍⚕️👩‍⚕️Doctors more business, anyways they are quite busy keeping pandemic away🐸




RECIPE

Serves: Atleast 8 hungry mouths
Prep time: to cool ingredients taken out from fridge
Bake time: 30 minutes 
Tools: Oven, 6 inch bake tin, grater

INGREDIENTS 

1. Apples 2 medium sized
2.  Oats flour 1/2 cup + 2 tsp for garnish
3. Wheat flour 1 cup + 2 tsp for dusting pan
4. Baking soda 1/2 tsp
5. Baking powder 1 1/2 tsp 
6. Cinnamon powder 1 1/2 tsp
7. Cardamom powder 1/4 tsp
8. Salt 1/4 tsp 
9. Curd 1/2 cup 
10. Jaggery 3/4 cup
11. Oil 1/2 cup
12. Walnuts 2 tbsp for garnish 
13. Lime juice 1 tsp

METHOD

1. Wash and wipe the apples thoroughly. Chop walnuts roughly and keep aside.

2. Sift all dry ingredients i.e. wheat flour, baking powder and soda, salt, cinnamon and cardamom powder all together in a mixing bowl. Add oats and combine.

3. In another bowl make wet mixture, first mix curd with jaggery. Let jaggery dissolve in the curd.

4. Add oil and whisk well.

5. Pour the liquid to flour and fold the ingredients to make a very thick batter.

6. Grate apples with skin and sprinkle lemon juice, so that it doesn't turn brown.

7. Preheat oven at 180°C. Grease a cake, dust and coat it with wheat flour.

8. Add the apple grates to batter. Only fold and not mix vigorously. Please refer to video link to see how I did this step.

9. Add to the the cake pan. Flatten by pressing gently. Put inside the oven and bake for 30 minutes. Or until skewer inserted in center comes out clean.

10. Remove and keep to cool on a stand.

11. Use a dish and invert the cake. Watch the video link here to see how I did this step silly me

12. Cool it and then cut it, so you will get clean slice....not like mine🤦‍♀️, I cut when it was hot-warm🙈.

13. Serve as dessert or breakfast 😋 or enjoy anytime of day.




Kadha Chai for Stronger Immune

 





Kadha Chai is a black tea made with whole spices tulsi/ Indian basil leaves and crushed ginger. It is believed to be a home remedy for many ailments. This kadha can be given to someone suffering from sever cold 🥶 and/or cough 🤧 or if having stomach upset or digestion issues. It immediately relieves and makes calm. Helps in better sleep if given at bedtime. Having this tea early morning quickly replenish your mind and helps feeling fresh.

Why I decides to make this today is because, my maid turned up and was sneezing and coughing like hell🤒🤕 Gave her a bigger mug ☕we had our tonic and carried on with our chores,  feeling much better 😅

Having said that! it is too tasty!  So me and my family often drink Kadha chai in different variations during bedtime or early morning.

Kadha Chai for Stronger Immune

RECIPE

Yields: 2 cups 
Prep time: 2 min
Cook time: 10 min
Tools: Tea strainer, Tea pan, crusher


INGREDIENTS 

1. Water 3 cups. 
2. Tulsi leaves 1/2 cup. 
3. Ginger 1 inch piece. 
4. Cloves 2 nos. 
5. Pepper pods 1 tsp. 
6. Star anise 1 flower. 
7. Cinnamon stick 1 inch piece. 
8. Green Cardamom 2 nos. 
9. Black Tea powder 1/4 tsp. 
10. Jaggery 2 tbsp or 2 small pieces.

METHOD

1. Wash tulsi leaves and ginger in water. 





2. Take water in a pan. Add crushed ginger, broken cardamom, tulsi leaves and all other ingredients. 



3. Boil this for 7 minutes to reduce the water from 3 cups to approximately 2 cups. 




4. Strain using tea strainer directly into cup and enjoy aromatic kadha chai. 




5. Adding a piece of turmeric is recommended if going through allergy issues.
