Baked Dal Pakwan


One of the most sacred relationships in the world is that between a Teacher/Mentor and a Student/Mentee. 

For me a mentor is someone who inspires me or teaches me, even a small lesson in life, insignificant of their age or how they are related to me. 

I am someone who will never stop learning from every person I meet 😌☺ so I have uncountable mentors in my life. 

But I would like to mention a few names here who have made a huge impact on me....

Starting with my mom, my hubby, Anusha, Aditya, Darshini, Simran Oberoi Multani, my many many friends and list just goes on after this....

Have made this healthy, lipsmacking snack for the occasion, its a baked Sindhi delicacy....Dal Pawkan,

RECIPE

Serves: 4
Prep Time: 15 minutes
Bake Time: 40 minutes
Total Cook Time: 1 hour
Tools: Oven, rollin pin, pressure cooker, kadai, Baking tray, muffin cups (optional)

INGREDIENTS

For Dal

Chana Dal 1/2  cup
Toor Dal 1/4 cup
Moong Dal 1/4 cup
Urad Dal 1 tbsp
Salt 1 tsp
Groundnut oil 2 tbsp
Onion 1 finely chopped
Tomato 1 finely
Ginger grated 2 tsp
Greeen chillies 2 finely chopper
Coriander leaves 2 tbsp fine chopped
Red chilli powder 2 tsp
Coriander powder 1 tsp
Turmeric 1 pinch
Cumin seeds 1 tsp

For Pakwan

Wheat flour 3/4 cup
Corn meal 1/4 cup
Carom Seeds 1 tsp
Salt 1/2 tsp
Oil 3 tbsp
Water 1/2 cup




METHOD

Soak al Dals in warm water for 30 minutes.




Wash and chop onion, tomatoes, chilies, coriander, grate ginger and keep aside.

Transfer soaked dal to pressure cooker, add pinch of turmeric and salt and take 2 whistles or until they are mushy.




Whilst dal is cooking lets prepare the dough for Pakwan. Take a wide bowl and add both flours, salt, crushed carom seeds and oil. Mix everything well by rubbing. 





Knead a stiff dough using water little by little. Coat with oil and keep covered. Whilst dough is resting lets temper the dal. 


Heat a kadai with oil. Add cumin seeds and let it splutter.

To the oil add onion, green chili, ginger and sauté. 

Once onion get soft add tomatoes and till they are nice and soft. Add all the spice powder and remaining salt.


To this add the cooked dal, incorporate everything together and cook for few minutes. Switch off the flame. Dal is ready. 


Preheat oven at 180 degrees C.

Take a small lemon size dough, roll it into thin puris, prick the discs with a fork or a knife.


Place the discs in the muffin cup and press against the bottom and sides. Cut the excess dough. If not making in cup form just make thin discs and use cutter to give desired shape, or leave it round.

Similar way use all the dough and make pakwans.


Arrange the cups on baking tray. Put the tray inside oven and bake for 20 minutes or until they are crispy and golden brown. 

Remove the tray from oven and leave to cool for few minutes.




Serve the prepared dal in pakwan cups and enjoy.



Tips and Tricks:

The Pakwan can also be made in form of discs, just like the traditional ones and baked. 
Keep an eye on the Pakwan while baking as temperatures are different for different ovens.
