Tomato Rice is a spicy and tangy dish, which is very flavourful and aromatic. Although this dish can be prepared with fresh steamed rice, but this is a very good way to present your leftover rice in a new interesting avatar.
I have added few spices in hot oil while sautéing vegetables, that makes this a very classy and restauranty type dish. It is a very good meal to pack on your tiffin.
Tomato Rice from leftover rice
RECIPE

INGREDIENTS
For rice preparation
1. Tomatoes 3 nos.
2. Steamed rice 2 cups
3. Oil for cooking 3 tbsp.
4. Cardamoms 2 pcs.
5. Black cardamom 1 pc.
6. Cumin seeds 1 tsp.
7. Cloves 2 pcs.
8. Black pepper corns 1 tsp.
9. Onion 1 nos.
10. Garlic paste 1 tsp.
11. Ginger paste 1 tsp.
12. Garam masala powder 1 tsp.
13. Coriander powder 1 tsp.
14. Turmeric powder 1/4 tsp.
15. Salt to taste.
16. Spicy chilli powder 1 tsp.
17. Degi mirch powder 1 tsp.
18. Chopped Green onions for garnish 1 tbsp.
19. Firm tomato sliced for garnish 1 nos.
For Raitha
20. Black pepper powder 1 tsp.
21. Roasted cumin powder 1 tsp.
22. Salt to taste.
23. Chopped coriander 1 tbsp.
24. Cumin seeds 1 tsp.
25. Mustard seeds 1 tsp.
26. Oil for tadka 1 tbsp.
27. Red chillies chopped 2 nos.
METHOD
1. Wash onion, green onions and chop them finely. Wash tomatoes and make 2 slits on it.
2. In a sauce pan boil 1 cup water. Blanch tomatoes in it for 5-7 minutes and switch off heat.
3. Peel of the skin from tomatoes and grind to smooth paste.
4. Heat oil in a kadhai, add cumin seeds to splutter. Also add all the spices, black pepper corns, cardamoms, cloves and saute for few seconds.
5. Add chopped onions, ginger garlic paste and cook until onion looks soft.
6. Season with all the spice powders, degi mirch powder, spicy chilli powder, coriander powder, garam masala, turmeric and salt.
7. Combine everything together and cook for seconds.
8. Add the tomato puree. Cook this mixture until oil separates. Keep stirring frequently.
9. Add the rice and mix together.
10. Garnish with green onions and sliced tomatoes
11. In a bowl beat the curd, add to it black pepper powder, cumin powder, salt and chopped coriander.
12. Prepare the Raitha by keeping a tadka pan on heat, put oil, mustard & cumin seeds and wait till seeds splutter.
13. Add chopped chillies and fry for few seconds.
14. Pour the tadka over the curd mixture and mix well.
14. Serve tomato rice with this refreshing raitha.
