Perfect crunch from the baked rolled oats, slightly sweet from juicy carrots and some honey, a little salty to balance the flavors. In all a perfect Sunday morning breakfast. I Added some wheat flour for binding the cookie dough and added ghee for fat.
Rolled Oats Carrot cookies
RECIPE
Yields 14-16 cookies
Prep time: 5 minutes
Bake time: 20 minutes
Tools: Oven, 250 ml measuring cup, cookie tray, parchment paper
INGREDIENTS
Rolled oats 3/4 cup
Rolled oats 3/4 cup
Wheat flour 1/2 cup
Carrot 1 or 2 medium size
Honey 3 tbsp
Salt 1/4 tsp
Ghee 2 tbsp
Baking powder 1/4 tsp
Cocoa nibs/ choco chips/ dry fruits 2 tsp.
METHOD
1. Wash clean and grate carrots. Chop dried fruits and nuts if using.
2. Mix everything together, rolled oats, wheat flour, grated carrots, honey, salt, ghee, baking powder and toppings of choice.
3. Make small even sized balls. Use a tablespoon to measure.
4. Flatten them a little and place on a baking tray.
5. Place cookies 1/2 an inch apart.
6. Bake in preheated oven at 160°c for 15 minutes.
7. Remove from oven after 15 minutes. Place on a wire rack to cool.
