3-4 large potatoes
2 tsp oil
Salt and seasoning of your choice
I used chaat masala and salt
Wash and peel potatoes.
Slice them and cut them in long strips, like for French fries.
Keep them immersed in a big bowl of tap water for 20-30 minutes for the starch to release. We do not need starch.
After 30 minutes remove them from water and wipe the moisture off with a clean kitchen towel.
Preheat your oven at this point. 210C
Layer on a microwave safe tray and let them soften for 3-4 minutes. It took me 2 batches to do so.
Again wipe off the moisture from the potatoe pieces as much as possible with a clean towel.
Put these in a large bowl, add oil and toss them so all the pieces are coated in oil. Can add a tsp of more oil if required. I didn't require so I didn't add more. 2 tsp was enough for me. Can use any oil, sunflower, coconut , olive oil etc...
Now layer them on a hot baking tray. Arrange in single layer for amazing crunch.
Bake in otg for about 25 min or till they are golden brown.
Remove from oven and while the wedges are still hot sprinkle some seasoning and salt and mix them well. I sprinkled chaat masala and some salt.
Serve hot.
P.S. Softening the potatoes in microwave is essential, this step should not be skipped. If u do not want to use microwave, Then u can blanch them for few minutes and remove them onto a kitchen towel and dry them.
