Easy Delicious Frittata

Zucchini Frittata 


Me and my husband are Vegetarians and do not eat non veg or eggs, but our kids enjoy eating eggs very much. They can have eggs in any form.

Both kids are very foodie, some years ago I saw a recipe video of Frittata by Laura Vittale. She made Frittata partly in skillet and finally baked it. I found this method to be very interesting where vegetables are partially cooked before putting into oven. She made the recipe in simple onion and potatoes.

So I loved the recipe and gave it a try the first time using potatoes and onion. It takes a little time to bake in a loaf pan, so it was a morning breakfast time and made this as a surprise. Both liked the dish very much. Though Laura used 2 types of cheeses in it. I mostly use processed cheese that we get easily in local grocery shops.

I by now got the idea that my  kids love everything that's Italian 😂😊💗

I tried it with zucchini and it worked again. 
So try this dish. It's easy to assemble and just put it in oven and give it time to bake. Any egg lover is going to like this. Add as many veggies you like to make it more filling.

RECIPE

Serves: 2 people
Prep time: 7 minutes 
Bake time: 30 minutes 
Tools needed: Oven, whisk, Frying pan, 7×7 baking pan

INGREDIENTS 

1. Potatoes 3 nos. medium size 

2. Onions 3 nos.

3. Eggs 6-7 nos.

4. All purpose seasoning 1 tsp

5. Cholli flakes 1/2 tsp

6. Butter 2 tsp

7. 1/4 cup Grated cheddar cheese 

8. Black pepper as per taste

9. Salt as per taste

10. Coriander leaves 2 tbsp

METHOD

1. Preheat oven at 180C.

2. Wash and Peel potatoes and chop them big chunk size pieces. 

3. Remove the cover and slice onions.

4. Take a pan add butter and onions and saute for 2 minutes.

5. After 2 minutes add potatoes and saute till they are look half cooked. Sprinkle pinch of salt and pepper. Mix well so that onions and potatoes are coated well.

6. In a medium size mixing bowl put chopped coriander leaves, chili flakes and seasoning. Break in all the eggs and beat lightly.

7. Add grated cheese, onion-potato mixture to the eggs.

8. Take an oven safe tray,
 pour the egg mixture in it. Sprinkle some seasoning on top if you like the spicy golden colour bake on top.

9. Bake for 30 minutes /till the top looks little golden brown.

10. Your Frittata is ready to be served.
