Desi Lasagna/Quick fix Indian take on Lasagna

 


During lockdown everyone is working from home, children are also at home all the time. 

And moms like me spend most of the time thinking what new to cook today. Even I am getting fed up with the same old chapati dal sabji roti.

Don't worry, you don't have to run to a departmental store to get sheets for making this lasagna.

You will find everything you need in your kitchen pantry for this dish. You may tweak this recipe and give it your own twist and assemble things that your family likes or use items that are already available in your pantry. 

Desi Lasagna/Quick fix Indian take on Lasagna


RECIPE

Serves : 4 people

Prep time: 15 minutes 

Cooking time: 30 minutes 

Tools needed: Oven, Non stick pan, 7×7 inch baking pan.


INGREDIENTS 

1 cup rice flour

1/2 cup chick pea flour/besan 

1/4 cup Wheat flour

Salt to taste

1 tsp Carom seeds

1/2 tsp Red chilli powder 

1/4 tsp Turmeric powder

1/2 tsp Cumin powder

1 tsp ginger garlic paste

1 cucumber grated

2 tbsp coriander, chopped

Oil for cooking

5-6 Cheese slices 

1 cup grated cottage cheese/ paneer /tofu 

1 cup tomato pulp

4 tbsp diced cheddar and mozzarella cheese

1 tsp Red chilli powder 


METHOD

In a bowl mix all flours, dry spices, salt and mix well.  

Add ginger garlic paste, grated cucumber.

Add water, mix and prepare  a thick batter. Keep covered for 10 minutes. After 10 minutes adjust the consistency, add more water if needed.

Keep all other items ready. Also Keep ready a 6/7 inch baking pan for assembling the lasagna.

Heat a griddle, put 2 drops of oil. Spread with help of paper napkin.

Pour 2 big spoons full of batter, spread and cook from both side like you do for dosa or uttapam. Repeat the same and make all the sheets. Make sheets similar to the size of your pan.

Assemble your desi lasagna. Spread tomato pulp in the bottom of the baking pan, then place one sheet, put paneer, then cheese slice.

Again spread tomato pulp, paneer, cheese slice. Do this till you use 4-5 sheets. Top with diced mozzarella and cheddar cheese.

Sprinkle chilli powder on top.

Bake on a preheated oven for 15 minutes. Tadda your quick fix lunch/dinner/breakfast for 4-6 people is ready in no time

Divide in 6 parts and serve hot. Enjoy this tasty and healthy twist to Italian Lasagna prepared in Indian Style.
